Preheat oil to 350 to 360 degrees. Oil should
bubble around wooden spoon inserted into the oil.
Cut chicken breast into 1/2 inch long strips.
Salt eggs then whisk. Dip strips into flour, then
egg, then panko. Put into oil but do not crowd.
Fry until deep brown for crunchiness. Remove from
oil and rest on paper towels. Salt and pepper them.
Dip for Chicken- Mix 1 part honey to 1 part dijon
mustard then drizzle with just a touch of olive oil
and a grind of pepper.
