In a large bowl, toss together the tomatoes, scallions, garlic and olive oil. Place on baking sheet and roast until veggies are carmelized. and soft, about 30 min.
Squeeze the roasted garlic from their peels,and discard the peels. Transfer veggies o a food precessor. Add the jalapenos,, cilantro, lime juice, salt and hot sauce. Puree til smooth and then transfer to a bowl to cool.
For chunky salsa, instead of pureeing dice veggies after roasting and combine well with the jalpenos, cilantro, lime juice salt and hot sauce
