1/4 cup prepared peanut sauce, plus additional for dipping
3 Tbs. finely chopped salted roasted peanuts
3 Tbs. minced scallions (white and light green parts)
1/2 tsp. salt , plus additional to taste
1/2 tsp. Tabasco or other hot sauce
1 clove garlic, minced
vegetable oil, for frying
Lime wedges, for serving
Instructions
In a large bowl, mix together the chicken, panko, the 1/4 cup peanut sauce, scallions, 1/2 tsp. salt, hot sauce,and garlic until just combined. Roll the mixture into 1 inch balls and transfer to a large baking sheet.
Fill a large, deep skillet with 1 inch of vegetable oil. Heat the oil over medium-high heat until a drop of water sizzles in the pan.
Work in batches, frying the meatballs, turning frequently, until golden and cooked through, 2-3 min. Transfer to a paper towel-lined plate and sprinkle lightly with the additional salt to taste. Serve with lime wedges and the additional peanut sauce.
