     Outer Banks Crab Boil/Homemade Crab Boil Seasoning

Ingredients
For Crab Boil Seasoning;
1 Tbs. whole black peppercorns
6 bay leaves
4 whole cloves
1 tsp. sweet paprika
1/2 whole cardamom
1/2 tsp. mustard seed
1/4 tsp. ground mace
1 Tbs. celery seed
 
For the Crab Boil-
1/4 cup homemade crab boil seasoning
1/4 cup salt
2 Tbs. distilled vinegar
24 live blue crabs
Drawn butter, for serving
crusty bread, for serving

Instructions
For spice rub-In a clean coffee or spice grinder, grind all spices together. Store in airtight container for up to 6 months.
For crab boil- Place a large pot of water the grill and bring to boil. Have ready a bucket of ice. Add the crab boil seasoning, salt, and vinegar to the pot of boiling water and drop in half the crabs. Cover the pot and simmer for 15 min.
Remove the crab with tongs and place in the bucket of ice to halt the cooking. Repeat with the remaining crabs.
Place the crabs on a serving platter and serve with drawn butter, crusty bread and plenty of napkins.
