     Popeye's Honey Pecan Chicken Salad

Ingredients
1 cup mayonnaise
1/2 cup relish
2 Tbsp minced onion
1 Tbsp honey
1 1/2 Tbsp sugar
1 tsp salt
1/4 tsp white pepper
3/4 cup chopped celery
3/4 cup toasted pecans, coarsely chopped
 
1 1/2 pounds chopped cooked chicken (about 4 cups)

Instructions
Combine the mayo, relish, onion, honey, sugar, salt and pepper in a bowl and mix well. Stir in celery and pecans. Fold in the chicken. Adjust the sesaonings to taste. Chill, covered, in the fridge. Serve on crusty French bread rolls with potato chips and carrot sticks or on a bed of salad greens garnished with red grapes.
Popeye was Dave Longaberger's nickname, as well as the name of the restaurant that used to be in Dresden. Every bus trip you used to be able to find me having a Chicken Salad Croissant, peanut butter milkshake and the best darn onion rings around...I will miss Popeye's! But can still enjoy the Chicken Salad!
