     Hawaiian Cookies

Ingredients
2 cups all-purpose flour, sifted
2 tsp baking powder
1/2 tsp salt
2/3 cup shortening
1 1/4 cups sugar
1/2 tsp vanilla
1/2 tsp almond extract
1 egg
3/4 cup crushed pineapple, well drained
 
3/4 cup shredded coconut, finely chopped

Instructions
1.Preheat oven to 325 degrees. In a small bowl, sift flour, baking powder and salt; set aside. In a large bowl, cream shortening, sugar and both extracts thoroughly. Beat in egg until mixture is fluffy. Stir in pineapple and coconut; add flour mixture slowly. Mix well. Drop by teaspoonfuls 3 inches apart onto ungreased cookie sheet.
