     Grandma's Finnish Biscuit

Ingredients
4 1/2 tsp dry yeast
2 cups milk (scalded, cooled)
1 cup sugar
1 tsp salt
2 tsp cardamom
3 eggs
6-7 cups flour
1 stick butter melted/soft
butter, melted
 
cinnamon
sugar

Instructions
Dissolve yeast in warm milk. Add 2 cups flour, sugar, salt, cardamom, and eggs. Beat 1 minute on 2. Add 1/4 cup melted butter and 4 cups flour. Change to dough hook and mix well. Gradually add remaining butter. If too soft, add flour 1/2 cup at a time until you have workable dough. Let rise until double (2 1/2 - 3 hours). Divide dough into four pieces. Roll each piece into 9x12 inch rectangle, spread with melted butter, sprinkle with cinnamon and sugar. Roll dough up and pinch seam. Let rise again in loaf pans until double (2 - 3 1/2 hours). Bake at 350 degrees for 15-20 minutes until dark golden brown. Do not under-bake. To serve, slice, toast, and top with butter.
