     Potatoes with Bacon and Parsley

Ingredients
1½ lbs new potatoes
kosher salt and pepper
4 slices bacon
3 tbsp olive oil
2 tbsp red wine vinegar
2 tsp djion mustard
1 c fresh parsley, chopped
 

Instructions
Put potatoes in a pot with some salt and water and cover and simmer 15-18 min. or until tender. Drain and run under cold water to cool. Meanwhile cook bacon until crisp. Whisk together oil, vinegar, mustard, salt, and pepper. Add potatoes, crumbled bacon, and parsley and toss to combine.
