     Down-Home Baby Back Ribs (3)

Ingredients
2 Tbs. Kosher salt
2 Tbs. dark brown sugar
1 Tbs. sweet paprika
2 tsp. garlic powder
2 tsp. dry mustard powder
1 1/2 freshly ground black pepper
1 tsp. onion powder
1 tsp. hot paprika
1 tsp. dried oregano
 
1/2 tsp. celery seed
2 racks baby back pork ribs (4-5 lbs.)
1/2 cup freshly squeezed orange juice
1/4 cup apple cider vinegar

Instructions
To make the rub, mix the salt, brown sugar, sweet paprika, garlic powder, mustard powder, pepper, onion powder, hot paprika, oregano and celery seed in a bowl, breaking up any lumps in the brown sugar or garlic powder with your fingers. To prepare the ribs, place them meat side down on a rimmed baking sheet. Slide your fingers under the thin membrane and peel it off. Repeat with second rack of ribs. Transfer 1 Tbs. of rub to a small bowl for serving and divide the remaining of the rub between the 2 rack of ribs, rubbing it into the meat all over, evenly.
Prepare the grill for indirect grilling, preheat to medium heat and brush with oil or nonstick cooking spray or Preheat the oven to 325 degrees f. If using the grill place a large roasting pan beneath the unlit portion and away from direct heat. Close and cook for 20 min. If using oven place ribs on rimmed baking sheet and bake 20 min.
Meanwhile, in a small bowl, whisk together the orange juice and vinegar. After the ribs have cooked for 20 min. brush them with the orange juice mixture. continue to grill or bake until meat is fork tender, and additional 1 hour and 40 min or so, brushing with sauce every 20 min.
If using the oven, lightly broil the ribs under direct heat for additional 3 min per side. If grilling, uncover for 3 min. per side. Let ribs rest for 5-10 min. before cutting them for serving. Sprinkle with reserved rub before serving.
