     Cracked Black Pepper Skirt Steak (6)

Ingredients
2 garlic cloves, finely chopped
1 tsp. kosher salt, plus additional to taste
1 1/2 lbs. skirt steak
1 Tbs. cracked black pepper
1/4 tsp. dried oregano
2 tsp. olive oil
 

Instructions
Using a mortar and pestle or the flat side of a chef's knife, mash the garlic with 1 tsp. of salt until a paste forms. Rub steak all over with the garlic paste. Season steak lightly with additional salt, pepper and oregano. Coat steak with olive oil.
Preheat grill to high and brush the grate with oil or spray with nonstick cooking spray. Transfer steaks to the grill. Close the cover and cook to desired doneness (2-3 min. per side for medium-rare.)
Let steaks rest for 5 min. on a platter or cutting board before slicing thinly and serving.
