Preheat oven to 350° F.
Coat mini loaf pan with non-stick cooking spray.
Blend together vanilla pudding, scrambled eggs, ½ teaspoon cinnamon,
baking powder, and Splenda.
Pour into mixing bowl and add water and vanilla extract.
Mix well.
Pour out mixture into loaf pan - the thinner the better.
Bake for 15 minutes or until top is firm.
Allow bread to cool while mixing cream cheese Cut bread into slices in
two equal portions and spread on cream cheese mixture to serve
