     Corn Yum-Yum

Ingredients
15 slices bacon
3 onions, diced
4 (1lb 13 oz) cans or 7-8 cups corn
3/4 lb American cheese, diced or grated
8 eggs
salt and pepper
12 slices toast
 

Instructions
Cut bacon into small pieces. Fry in a kettle and pour off most of the fat, keeping enough to fry the diced onions. When onions are browned, add corn and heat thoroughly. Add the cheese and stir constantly until melted. Add eggs, one at a time, beating each into the mixture. Cook until slightly thickened (10 minutes). Season well and serve on toast. Goes well with cole slaw or tossed salad.
