     Creamy Rice Pudding

Ingredients
2 C. raw rice
2 qts. water
1 tsp. salt
3 C. milk
2 Tbs. cornstarch (dissolve in cold milk first)
1 1/2 C. sugar
4 eggs, beaten
2 Tbs. vanilla
1/2 tsp. lemon juice
 
cinnamon
nutmeg
raisins

Instructions
In a large, pan cook raw rice and water with salt for 20 min.
When tender add milk, cornstarch, sugar, and eggs. Stir and heat until it thickens. Add vanilla and lemon juice.
Add cinnamon, nutmeg, and raisins to taste.
