Boil down sap or syrup until drops of the liquid form a hard ball when poured into 1 cup of cold water. Then pour the maple syrup on clean snow and let it harden into sugar cakes htat can be eaten as candy.
In the South, cane syrup may be used instead of maple sap or syrup. Cook to hard ball stage. Cool and pull like taffy.
