Use broilers in place of roasters. Split the chickens down the center so they will open out flat. Clean as in method 1. Well in advance, dig a trench about 1 foot deep and long enough to take care of the number of chickens to be cooked. Build a fire in the trench, using hardwood, and allow to burn for about 1 hour. When this has burned to coals, place a broiler over the trench. This may be improvised from chicken wire or a similar material. Place the chickens on the wire, opened out,and allow to cook slowly. If they begin to brown immediately, the fire is too hot and some of hte coals should be removed. Baste with barbecue sauce. This method ususally requires less time than method 1, but is not as picturesque. 1 or 1 1/2 hours should be allowed.
