Ingredients
1/2 cup fine grind or medium grind bulgar
1/3 cup extra virgin olive oil or more as needed
1/4 cup freshly squeezed lemon juice or to taste
salt and pepper
2 cups roughly chopped parsley
1 cup roughly copped mint leaves
1/2 cup chopped scallion
4 medium tomatoes, cored, seeded, and chopped
 

Instructions
soak the bulgar in hot water and cover until tender, 15-30 min. drain well, squeezing out as much water as possible. toss the bulgar with the oil and lemon juice and season with pepper
just before ready to eat add the parsley, mint, scallions, and tomatoes and toss gently. taste amd adjust the seasoning and serve.
