In a plastic bag, mix bread crumbs, Parmesan cheese, garlic, onion, and cayenne powder; set aside. In a small bowl, mix eggs and, if desired, add a little more garlic and cayenne.
Flatten the chicken to 1/2-in. thickness; cut into 1-in.-wide strips. Dip strips in eggs; coat with crumb mixture, repeat for double breading.
Place on a greased baking sheet. Bake at 400 degrees F for 20 minutes or until golden brown.
