Boil carrots and celery for 30 minutes. Add potatoes and boil for another 30 minutes. Brown hamburger meat and onion. Drain off grease. Add velveeta and other ingredients, stirring to melt Velvetta. Add up to 1 1/4 cup milk (to get desired thickness of soup). Serve with crackers.
