     Dutch Funnel Cakes

Ingredients
oil for frying (I use vegetable oil)
1 1/4 cup all purpose flour
2 T.sugar
1 t. baking powder
1/4 t. salt
2/3 cup milk
1 egg ( I use jumbo size) beaten
powered sugar
 

Instructions
In heavy skillet,slowly heat 2 inches of oil to 350 degrees. In bowl,mix sugar,flour, salt and baking powder.Make a well in center and pour in milk and egg. Mix with a wooden spoon until batter is smooth. Holding a funnel with finger over spout, pour 1/2 cup batter in to funnel.Funnel should have 5/8 inch opening. Starting at center of skillet, drop batter in ,moving the funnel in a circle to make a snail like coil.Fry until golden brown on bottem,then flip carefully to other side.Brown that side,then remove to paper towel.If batter becomes to stiff,add more milk. Sprinkle with powdered sugar or you may like to make a glaze of powered sugar and water. If I make the glaze, I then use a pastry brush to cover cake with glaze.
Serving Suggestions
You may also make these for breakfast and use maple syrup for the topping
