Heat water with butter. Do not allow to boil. Butter a deep casserole and put in apples, close together. Fill the centers of apples with 1 1/2 cups of sugar mixed with lemon rind. Sprinkle 1/4 cup of sugar over the apples. Pour the warm water and butter mixture in from the edge of the pan. Cover and bake in a relector oven for 15-20 minutes. Mix soft boiled rice with 1/4 cup of sugar and 2/3 Tbsp of apple juice from casserole. Cover apples with rice and dot with the Tbsp of butter. Cover and return to the oven and bake until apples and rice are tender.
In some sections of Canada, all ingredients are mixed and served like a mush. In other sections, this dish is allowed to brown over the top by removing cover during the last 10 minutes. It is served hot in the casserole with heavy sweet cream.
