Wash and trim the ham slices. Cut carrots into thin strips. Then place a layer of the carrots and a layer of onions on the bottom of a greased Dutch oven or covered baking dish. Season with salt and pepper. Lay one slice of the ham on onions and spread with prepared mustard. Put in another layer of carrots, onions, ham, and mustard and pour in 1 cup of water. Cover tightly and bake 3-4 hours in a bean hole.
