For 1 serving- Cut potato in 4 crosswise slices. Spread butter on each side of the slices. Cut 1/2 onion in rounds and place between potato slices; salt and pepper them. Secure slices with toothpicks or skewers. Wrap these potato-onions tightly in foil. Bake in embers 30-40 minutes.
