20 oz. canned pineapple chunks in water or natural juice (this dish is more fruit than meat)
3 tablespoons low-sodium soy sauce
3 tablespoons honey
1 teaspoon ground ginger
up to 1 teaspoon red pepper flakes (this dish is spicy, use less if desired)
Instructions
Heat the olive oil in a large saute pan over medium-high heat.
Season the chicken with salt and pepper and saute the chicken until
browned, about 7 minutes.
Reduce the heat to medium. Add the garlic and bell pepper and
cook until softened, about 5 minutes.
Add the pineapple and season with salt and pepper. Add the soy
sauce, honey, ginger, red pepper flakes and cook for a few minutes
more.

serve with rice and steamed broccoli
