Preheat oven to 425 degrees.
Combine eggs, milk, flour, granulated sugar, vanilla, salt, and cinnamon in mixer bowl, blender, or food processor. Blend and set aside.
Melt butter in a 9x13 in. glass baking dish. Layer apples in melted butter and return to the oven until butter sizzles. Do not let butter brown.
Remove pan from oven; immediately pour the batter over the apples and sprinkle with brown sugar. Bake for 20 min. or until puffed and golden. Serve immediately with syrup.
