     Apple Puffed Pancakes

Ingredients
6 eggs
1 1/2 cup milk
1 cup all purpose flour
3 tbs. granulated sugar
1 tsp. vanilla extract
1/2 tsp. salt
1/4 tsp. ground cinnamon
8 tbs. butter
2 apples, peeled and sliced thin
 
2 tbs. brown sugar
1 cup firmly packed brown sugar
1/2 cup orange juice
2 tbs. grated orange peel

Instructions
Preheat oven to 425 degrees. Combine eggs, milk, flour, granulated sugar, vanilla, salt, and cinnamon in mixer bowl, blender, or food processor. Blend and set aside. Melt butter in a 9x13 in. glass baking dish. Layer apples in melted butter and return to the oven until butter sizzles. Do not let butter brown. Remove pan from oven; immediately pour the batter over the apples and sprinkle with brown sugar. Bake for 20 min. or until puffed and golden. Serve immediately with syrup.
Syrup- Combine all ingredients in small saucepan while pancake baking. Simmer over low heat for 5 min.
