     Hot Fudge Sauce

Ingredients
3/4 cup heavy cream
1/4 cup unsalted butter, sliced
Pinch of fine salt
1/2 cup sugar
2 tbs. light corn syrup
2 tbs. water
9 oz. good quality bittersweet, or semi-sweet chocolate, finely chopped
1 tsp. pure vanilla extract
 

Instructions
In measuring cup, combine cream, butter and salt. Set aside. In medium saucepan, over medium heat, cook sugar, corn syrup, and water, stirring until sugar is dissolved. Increase heat to high and bring mixture to a full boil. Cook until a dark amber color, about 1 to 2 min, without stirring. Remove pan from heat and carefully pour the cream mixture into the sugar mixture. Whisk until smooth. Put chocolate in large heatproof bowl. Pour the hot cream/sugar mixture over the chocolate. Add vanilla and whisk until smooth.
