     OJ Blueberry Oat Muffins

Ingredients
1/2 cup old-fashioned oats
1/2 cup orange juice
1 egg
1/2 cup vegetable oil (or 1/4c applesauce and 1/4c oil)
1/2 cup sugar (or equivalent splenda-sugar blend)
{1 teaspoon honey} (only add this if using splenda-blend for sugar)
1 1/2 cups all-purpose flour (try half wheat flour, half white)
1 1/4 teaspoons baking powder
1/2 teaspoon salt
 
1/4 teaspoon baking soda
1 cup fresh or frozen blueberries
TOPPING-
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon

Instructions
Combine the flour, baking powder, salt and baking soda;
In a separate bowl, combine oats and juice; let stand for 5 minutes. Beat in the egg, oil and sugar until blended. stir in flour mixture just until moistened. Fold in blueberries.
Fill greased or paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter. Bake at 400 degrees F for 20 minutes or until a toothpick comes out clean. (I suggest reducing heat by 25 degrees for the last ten minutes if using low-fat or cal variations)
Cool for 5 minutes before removing from pan to a wire rack.
Serving Suggestions
Use any kind of juice, be creative. Try using half wheat flour and half white flour I swear it's still delicious!!
