     PANZANELLA

Ingredients
2 garlic cloves
5 tbs. extra virgin olive oil
1/4 cup red wine vinegar
4 large vine-ripened tomatoes, cut into chunks
1 European cucumber peeled, seeds removed, cut into chunks
1 red bell pepper, roasted peeled, cut into strips
1 yellow bell pepper, roasted, peeled, cut into strips
1 red onion, thinly sliced
4 thick slices crusty Italian bread
 
1 cup torn basil leaves

Instructions
Crush 1 garlic clove and whisk with olive oil and vinegar. Season with salt and pepper.
Place tomato, cucumber, peppers and onion in a bowl and pour over dressing. Cover and set aside at room temperature for 1 hour.
Cut remaining garlic clove in half. Grill or char grill the bread until golden and, while still warm, rub with the halved garlic clove. Just before serving, break into bite-sized pieces. Add to the salad with basil and toss well.
