Wash clean wipe off clean the Okra/bhindi and cut them in 1/2 inch long(cylindrical) size.
Add all the dry masalas to it and keep it ready
Heat oil in the Pan and add mustard and jeera seeds.
As this splutters add the Orkra/bhindi to it and saute it for 2 Mins.

In the meanwhile have a baking tray ready.
Transfer all the bhndi into the baking tray and broil it on Hi for 8-10 Mins and then on Low for 5-8 Mins or till it becomes crispy. You need to mix the Bhindi after every few mins that every side gets crispier

For the Gravy
Mix the yogurt with besan, some salt and keep it aside.You can even blend it in the mixer to hv a smoother paste
In a seperate Pan add little oil and fry the onion till they turn golden brown.
Add the yougurt mixture to the onions and keep stirring it till it comes to a rolling boil

Keep an eye on the Bhindi and turn the oven off as soon it turns crispy
Now add the bhindi to the yougurt mixture and mix it well. Do not smash the okra in the mixture.
Add Corriander leaves / A big Pinch of kasoori Methi and or add Fried Onions and serve
