Stew Ingredients-
3 t canola oil, divided
2 lbs boneless skinless chicken breasts, cut in half lengthwise (so they cook faster)
1 medium onion, finely chopped
2 medium carrots, diced
2 medium leeks (white & light green parts only), sliced thin
3 T white whole wheat flour
1/4 cup dry white wine
4 cups fat free reduced sodium chicken broth
1/4cup skim milk
3 springs fresh thyme, leaves only
1 bay leaf
1-2 T fresh tarragon leaves, minced
Salt and black pepper, to taste
