     spanish style plantain stew

Ingredients
1/4 cup extra virgin olive oil
1 small onion chopped
2 frying (anaheim or cubanelle) peppers or 1 green bell pepper, chopped
1 lrg or 2 med carrots, chopped
2 cloves garlic finely chopped
salt n pepper
1 tspn smoked paprika
pinch saffron
2 green or green-yellow plantains, peeled and cut into chunks
 
6 cups veggie stock
1 bay leaf
lime wedges and chopped fresh cilantro for garnish

Instructions
put the oil in a large deep saucepan or casserole over med high heat. when hot add the onion, peppers, carrots, and garlic. season with salt and pepper and cook stirring for 2-3 min, then sprinkle the smoked paprika over the pan, add the saffron and cook stirring for another min
add the plantains stock and bay leaf and bring to a boil. turn the heat down to low and simmer until the plantains are very soft, about 30 min. fish out the bay leaf
taste and adjust seasoning then serve
