     Caprese Burgers

Ingredients
1 T Balsamic Vinegar
1 T extra virgin Olive Oil
salt and pepper to taste
4 thick slices of Tomatoes
1 1/3 lbs lean Ground Beef
1 T Tomato Paste
1/4 C chopped fresh Basil
1/4 C grated Parmesan Cheese
 
1 clove Garlic, minced
1/4 tsp Black Pepper
4 oz fresh Mozzarella Cheese, sliced
4 Hamburger Buns, split
Fresh Basil Leaves

Instructions
Whisk balsamic vinegar, oil, salt and pepper in a small bowl. Pour over tomato slices to marinate.
Preheat grill for medium-high heat, lightly oil grate.
Mix ground beef, tomato paste, basil, Parmesan cheese, garlic and black pepper in a large bowl. Form 4 equal patties. Divide unused Tomato Paste into T portions, place into individual zippered bags and freeze for next use.
Grill hamburgers until desired doneness. Top each burger with Mozzarella cheese, allow to melt. Serve on buns with marinated tomatoes and fresh Basil leaves. Garnish with balsamic glaze.
Serving Suggestions
HINTS...substitute 1/4 C store bought Pesto for Basil, Garlic and Parmesan Cheese in burgers.
