In a bowl, combine masa, water and salt. Add additional water 1 Tbsp at a time if needed. Knead together to form a stiff and smooth dough; about 4-5 minutes.

Break dough into small balls about 1 1/2 inch in diameter and squeeze with your palms to form a thick, round pancake-type tortilla.

Find a glass, or an object with a smaller diameter than the dough patties. The idea is to press the object into the Sopes dough to flatten the center more while creating a raised edge. Do this through parchment paper to prevent sticking.

|
Heat about 1/2 inch of vegetable oil in a skillet. With a pair of tongs, place the dough into the hot oil and fry until golden on both sides; about 3-4 minutes. Drain and set aside until ready to top with your favorite ingredients. They are best eaten right out of the oil.
