     Chicken Marinara

Ingredients
4 chicken breasts (sliced in portions)
3 tbsp olive oil
3 cloves garlic minced
1 large or 2 small carrots minced
1/2 medium onion minced
1 large can of crushed tomatoes
2 tbsp tomato paste
3 tbsp fresh basil chopped (or 2 tsp dried)
2 tsp dried oregano
 
11/2 tsp salt
1/4 tsp black pepper
2 tsp franks red hot sauce
couple pinches of red pepper flakes
grated Parmesan cheese
3 tbsp fresh parsley chopped

Instructions
In a large sauce pan, heat 2 tbsp of olive oil with the garlic until fragrant. Add carrots and onions. Cook until slightly softened. Add crushed tomatoes, tomato paste, basil, oregano, salt, pepper, hot sauce, and pepper flakes, stir. Simmer, stirring occasionally, until thickened.
Brown chicken slices on both sides and place in a casserole dish. Pour sauce over chicken and sprinkle with grated Parmesan cheese. Cover with tinfoil and bake for 1 hour (350 degrees) or until chicken is tender. Sprinkle with parsley and serve.
