     Oatmeal Craisin Cookies

Ingredients
2/3 cup butter - softened
2/3 cup brown sugar
2 large eggs
1-1/2 cups old fashioned oats
1-1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1-1/4 cups (6oz pkg) craisins (dried cranberries)
2/3 cup white chocolate chips
 

Instructions
This recipe comes from Ocean Spray. Best Oatmeal cookies I ever made. Very popular with the neighbors. The texture of theses cookies is velvety smooth. I think it is because the oats are blended with the electric mixer as opposed to being stirred in as many other oatmeal cookie recipes call for.
Using an electric mixer, beat butter and sugar together until light and fluffy. Add eggs, mixing well. Combine oatmeal, flour, baking soda and salt in a seperate mixing bowl. Add to butter mixture in several additions mixing well after each addition. Stir in dried cranberries and chocolate chips.
Preheat oven to 375 deg f. Drop by rounded teaspoons onto ungreased cookie sheet (I use silicone pads or parchment paper). Bake for 10-12 minutes or until golden brown. Cool on a wire rack. Makes approximately 2-1/2 dozen cookies.
