Clean and rinse chicken. Blot dry. Generously apply seasoning rub
on inside and outside of chicken.

Put 1/2 full beer can inside the rack. You can add garlic, liquid
smoke, Worcestershire sauce, etc. to the beer. Place chicken over
the beer can on the rack. Stuff an onion in the neck to seal in
vapors.

Cook chicken for 1-2 hours until skin is dark golden brown and
very crisp. Temperature should reach 180. For a gas grill place
chicken on left side and set right burner to low-mwdium. For oven,
place is a pie pan with 1.4 cup of water and cook at 350.

When finished, let stand for 5-10 minutes, carve and serve!
