     Cucumber and Yogurt Soup

Ingredients
1 medium sized cucumber, peeled and diced
salt
2 cups plain yogurt
2 cups chilled chicken broth
1 Tablespoon olive oil
2 Tablespoons finely chopped walnuts
1 1/2 cloves garlic, finely minced
black pepper
1 Tablespoon chopped chives
 

Instructions
Sprinkle cucumber with salt; let stand 20 minutes 30 minutes. Beat yogurt and add broth and olive oil slowly to give a smooth mixture. Rinse cucumber pieces to remove excess salt. Drain well. Add cucumber, walnuts, and garlic to yogurt and season to taste with pepper. Chill, serve soup, garnished with chives in cold bowls.
