Preheat the oven to 250 degrees. Peel and cut the potatoes and onions into 1/2 inch slices. Grease the bottom and sides of Pyrex baking dish (about 7 x 9 inches) with a strip of bacon. Put a layer of meat, then a layer of onions. Sprinkle on a little more salt, and pepper. Cover with strips of bacon doesn't brown, turn on the broiler for a few minutes toward the end. I like the gravy from this dish served over rice.
