1.5 lbs boneless chicken breasts

14oz can diced tomato and green peppers (ro-tel)
|

15oz can black beans (drained)
|
|
1/4 cup fresh cilantro
|
|
14.4oz fat free chicken broth
|
|
1 tsp garlic
|
|
1 tsp onion
|
|
1 tsp cumin
|
|
1 tsp cayenne pepper
|
|
|
|
8oz frozen corn
|
|
shredded cheese as a topping
|
|
salt to taste
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Combine tomato mix, black beans, chicken broth, corn and seasonings in crock pot.
|
|
|
Season chicken with a little salt and lay on top.
|
|
|
Cook 10 hours on low or 6 hours on high. 30 minutes before serving, shred chicken and return to crock pot. Season to taste before serving.
|
|
|
Serve over rice or in a totrilla. Top with shredded cheese and cilantro.
