2 C of chopped up potatoes, small potatoes work best
8 corn tortillas, optional
2 limes, cut in quarters, optional
Instructions
Heat the oil in large skillet on high. Sear the pork on all sides but still raw in the center. Transfer them to crockpot.
Add the broth to the skillet and get all the pork leftovers. Pour broth over the pork in the pot and add the salsa verde, onion, and bell pepper.
Cook in a crockpot 4 hours on high or 8 hours on low. Stir every hour or so until the meat is extremely tender. If you are including potatoes, cook them in the final hour if on low and 40 minutes if on high.
Serve the pork in bowls with the stewed vegetables along with a ladle of the cooking liquid. Use hot corn tortillas and lime hunks for makeshift tacos.
