     Pork Piccata

Ingredients
1/2 C Italian-seasoned dried bread crumbs
1/4 C fat free egg substitute
2 tsp ground mustard
4 boneless lean pork chops
2 tbsp extra virgin olive oil
2 tbsp chicken broth
juice of 1/2 lemon
1tbsp finely chopped fresh parsley
 

Instructions
Spread bread crumbs on sheet of wax paper. Beat egg substitute and mustard in large shallow bowl. Working with 1 pice of pork at a time, dip into egg mix then coat with bread crumbs, pressing lightly so they adhere.
Heat oil in large nonstick skillet over medium heat. Add pork and cook until golden and cooked through, about 5 minutes per side. Transfer pork to platter; keep warm.
To make sauce, whisk brown and lemon juice into skillet; simmer 30 seconds. Stir in parsley. Pour sauce over pork.
