     Golden Fritters

Ingredients
15 g butter, plus extra for cooking fritters
1 small red onion, finely chopped
1 clove garlic, crushed
2 eggs
50 ml milk
3 heaped tablespoons self-raising flour
1x 300 g can creamed corn
1 tablespoon chopped coriander
salt and freshly ground black pepper
 

Instructions
Melt butter in a frying pan, add the onion and garlic, and cook gently until soft, about 5 minutes. in a large bowl lightly whisk the eggs and milk together. Sift the flour on top and whisk until there are no lumps. Stir in the corn, coriander, softened onion and garlic and season with salt and black pepper. Add a knob of butter to the frying pan. In batches, drop in large tablespoonfuls of the fritter muxture and cook on both sides until golden, about 4 minutes. Makes about 12 fritters.
