     Red Velvet Truffles

Ingredients
1 box red velvet cake mix
1 8oz package cream cheese, softened
1/4 Cup butter
1 1/2 Cups powdered sugar
1 teaspoon vanilla
2 packages white almond bark
1 Cup Chopped Pecans (optional)
 

Instructions
Make cake as directed in a 13 x 9 pan. Cool completely and crumble. In a large bowl, beat cream cheese and butter at medium speed until smooth. Gradually add powdered sugar and vanilla and beat until combined. Add crumbled cake, beating at low speed until combined.
Line a baking sheet with parchment or waxed paper. Shape the cake mixture into balls and place on sheet. Cover and freeze for at least 4 hours. Melt almond bark and dip the cake balls in the bark and place back on baking sheet to dry. Top with chopped pecans.
