     Quiche Lorraine

9 inch deep dish pie crust
1/2 pound or about 12 slices bacon, crisply fried and crumbled
1 cup shredded swiss cheese (about 4 ounces)
1/2 cup minced onion
4 eggs
2 cups whipping cream or light cream (20%)
3/4 tsp. salt
1/4 teaspoon sugar
1/8 teasppon Cayenne red pepper

Heat oven to 425 degrees. Sprinkle bacon, cheese and onion in pastry-lined pie pan. Beat eggs slightly- beat in remaining ingredients. Pour cream mixture into pie pan. Bake 15 minutes.(Protect edges of crust with aluminum foil strips wrapped around the edges.) Reduce oven temperture to 300 degrees and bake 45 minutes longer or until knife inserted 1 inch from edge comes out clean. Let stands 10 minutes before cutting. Serve in wedges
