1 1/2 cups milk, half-and-half, or some combinatio
1/4 cup fresh basil, chopped OR 1 tbsp dried basi
salt and pepper to taste
Parmesan cheese for serving, optiona
Instructions
Melt butter in a large saucepan over medium heat.
Saute onion and garlic for about three minutes,
until softened. Add tomatoes, spinach, milk,
basil, salt and pepper, and simmer uncovered until
heated through and spinach is tender. Serve
topped with Parmesan cheese if desired.
