     Eggplant Parmesan

Ingredients
1 eggplant
Flour
1 egg
Milk
Panko breadcrumbs
2 cans crushed tomatoes
1/2 cup parmesan cheese
 

Instructions
Peel and slice eggplant, coat in flour, egg wash, and breadcrumbs. Pan fry until brown. Heat tomatoes through. Place eggplant in pan, pour sauce over. Top with cheese. Bake at 350 for 45 minutes.
