     Spicy Thai Coconut Shrimp

1 1/2 Tbs water
1 1/2 teaspoons red curry paste
1 Lb Medium shrimp
cooking spray
2 1/2 cups (1-inch) sliced asparagus (about 3/4 lb)
1/2 tsp salt
1 1/2 C sliced green onion
1 (14 oz) can light coconut milk

Combine water & curry paste in medium bowl. Add shrimp and toss to coat. Place pan over MH heat with cooking spray. When hot, add shrimp mix and saute 4 min. Add asparagus & green onion cover and cook for 3 min (crisp tender) stir in salt and coconut milk cook 3 min until thoroughly heated
Serving Suggestions
serve over rice
