1. Heat oven to 220C/200C fan/gas 7. Rub a
little oil over each potato and put on the top
shelf of the oven. Bake for 20 mins, then turn
down the oven to 190C/170C fan/gas 5 and bake for
45 mins-1 hr until the skin is crisp and the flesh
soft.
2. Cut a cross on top of the potato, squeeze
the sides, and add a dollop of soured cream and
your favourite topping/filling.
Could use natural yogurt instead of sour cream if
preferred---or neither, experiment!
FILLING SUGGESTIONS-
Canned tuna
Sweet corn
Grated cheese
Slices of softer cheese eg brie.
Baked beans
Left over Chilli Carne or Bolognese sauce (make
sure it has been stored correctly in the fridge
and heated through thoroughly before use.)
Coleslaw salad
Crispy bacon and sliced spring onions
Just experiment!
