8 inch skillet, melt 2 tbsp coconut oil over medium heat. Saute
onions. Add shredded carrots. Add meat and garlic. Throw in
veggies, salt, pepper.
beat 6 eggs and 1/4 cup coconut milk, pepper and salt.
add egg mis to skillet. Mix well. Cook bottom at medium heat for
a few min. Pop into oven at 350 for 10-20 min until middle has
set. Then bring to a broil and remove when edges brown - 5min.
