     Swiss Älpler-Macaroni with Apple Sauce

Ingredients
Apple sauce- 8-10 apples
1-2 tablespoons sugar
Gratin- 250g potatoes
500 g Penne Rigate Macaroni
Salt, pepper, nutmeg
300 g Swiss Gruyere cheese
300 ml milk or cream
2 large onions
 

Instructions
Apple Sauce- Peel and cut the apples in quarters (e.g. Cox, Elstar) and cook in 150 ml water till tender. Add 1-2 tablespoons of sugar. Let it cool down and then blend with an electric mixer. Refrigerate.
Gratin- Peel the potatoes, cut in small squares and boil in water with a little bit of salt added till soft. Put into oven proof dish. Cook the penne in salt water until they are ready, (approximately 13 min.) Add to the potatoes already in the baking dish. Season with salt, pepper and nutmeg and mix well with the shredded Gruyere cheese. Pour the milk or cream over the prepared dish and bake in the oven at 200°C for about 30 minutes or till the cheese has melted and the top has turned golden. Peel and slice the two onions into onion rings, sprinkle with a little flour, salt and pepper and brown in pan with oil. Spread over the finished dish toward the end of the baking time.
