1. Dissolve yeast in warm water.
2. Stir together flour, sugar, and salt. Cut in butter until mixture
resembles coarse crumbs.

3. Add warm milk and egg yolks. Stir until soft dough forms. Beat
in yeast mixture.
4. Cover. Refrigerate for 4 hours or over night.
5. For filling, beat egg whites until soft peaks form. Combine
sugar and cinnamon.

6. Divide dough in half. Roll out one part at a time (refrigerate
remainder) on a well floured board to 10x15 inch rectangle.
7. Spread with beaten egg whites. Sprinkle with cinnamon sugar
and walnuts.

8. Roll up jelly-roll fashion. Seal.
9. Flip over onto greased baking sheet. Let rise until double,
about 40 minutes.
10. Bake at 350 degrees F for 35 minutes until golden brown.
